What’s a Shirataki? I Don’t DO Tofu…
I was half-watching The Today Show a couple months back, and a segment came on by Hungry Girl. I used to be a subscribed, but no more…I liked the tips, but it was just too much food obsession for me. But Lisa has great ideas, and she knows what she’s talking about. So my eyes moved off the newspaper and on to the tv screen. Thank you, HG! You have made our eating healthier, once again.
I’m talking Tofu Shirataki noodles. This pasta-substitute is made from yam and tofu, and is low-cal, low-carb, dairy free, gluten free, kosher, vegan….but yes: it’s real food! And tastes good!

Who says pasta has to be Italian?
I admit, the texture is a bit weird…have to adjust. But not bad, in fact good: just different. They come in 3 different shapes, and can be served hot or cold. I buy them in the refrigerated veggie section at the grocery…no probem finding them. I just keep them in the fridge until I’m ready to use them.
I use them as a direct substitute for pasta in both hot and cold dishes. I’ve made cold asian pasta salad…crunchy with lots of veggies and a miso dressing, and plain old spaghetti and (turkey) meatballs! Hungry Girl has lots of recipes, but I just use my own, and substitute the Shirataki for pasta. I know: HG’s been talking about these noodles forever, but I just started listening.
